The cheese-making process is a fine art, that requires energy and skills.
Particular attention is paid on livestock farming and processing methods. Indeed our milk will be processed only according to ancient procedures.
This is what gives our cheeses their characteristic flavour as well as our milk and yoghurt their unique taste. In order to maintain and further emphasize it, we do produce all of our dairy products from whole milk.
Between the milking and the completion of the cheese-making process elapse – in average 3 to 14 months. During this period our job consists in keeping the aging process constantly under control. The room's temperature as well as the humidity levels must be strictly observed.
Every single production stage is monitored and controlled, even while the different cheeses are ageing in the storage room while waiting to be served on your table or at one of our restaurants. Only a watchful eye can see how much dedication and effort lies in such an exquisite final product.

At the farm Lüch da Pcëi we practice a nature-related mountain farming. All of our products are organic and obtained from ancient processing methods. The resulting benefits are really many: the improvement of the landscape, the reduction of hydro-geological risks, healthy products and biodiversity are just some of them.
Today the mountain farmer plays an important role in the preservation and protection of the alpine landscape: thanks to his work he contributes to the maintenance of the mountain landscape, which is appreciated whether by the local inhabitants as well as by the tourists. Moreover, pastures also represents an important source of livelihood. From here they get the hay which is used as food for the animals.
The farm Lüch da Pcëi is South Tyrol’s widest and highest positioned farmed area: our meadows and green pastures are located here – in the heart of the Dolomites and wonderfully surrounded by overwhelming mountain peaks.
Unfortunately, today mountain pasture is perceived as something unimportant. However, a nature-related agriculture, as we practice it, is not only very important but also contributes to the preservation of the traditional alpine landscape.
For a mountain community, to maintain the alpine pastures as well as to carry out the many different other activities – first of all cattle breeding – are as much important as tourism. The reintroduction of ancient customs and techniques allows us to produce delicious, healthy and internationally acclaimed products.

Mens sana in corpore sano: an old Latin saying which is at the same time an effective summary about the importance of a healthy body for the vitality of the spirit. But how far can an unhealthy and in many cases unconscious nutrition affect the human health?
Food intolerance, allergies as well as chronic disorders such as obesity may result from wrong eating habits. Often they are due to false believes and a limited knowledge about nutritional properties, quality and amount of consumed foodstuff.
Indeed, the food's quality can be extremely varied. Diet should first of all be a pleasure for the palate but at the same time also support the physical well-being: an increasing consumption of fats as well as a general bad combination of nutrients is one of the main reasons for eating disorders.
This is why, at Lüch da Pcëi, we have chosen to practise a nature-related and healthy agriculture. Our cow's food – which includes also flax seed, alfalfa etc. is particularly rich in natural omega-3 fatty acids and allows – in this way – a proper food intake.
By doing so – and before the processing phase even starts - we do support nature as well as our body, which otherwise couldn’t produce this essential fatty acids by itself.
In 2010, after our milk and dairy products have undergone several inspections and analyses, our farm joined the “Bleu Blanc Coeur“-association. It is a French company which have put the well-being of the people as their first priority. Lüch da Pcëi is the first business achieving this award. The fifth on a national level.
